Cult of Ceres Imporcitor MMXVI

Winemaker’s Notes – The 2016 Imporcitor® Cabernet is sourced from the incredible Stone Tree Vineyard lying in the heart of the Wahluke Slope bound by the Columbia River and the Saddle Mountains. This is a 250-acre high-elevation vineyard boasting gentle south-facing slopes. Imporcitor refers to Ceres’ helper god who “plows the field with a wide furrow.” This Cabernet based blend showcases the beautiful fruit, minerality, and texture that are hallmarks of this vineyard.

Vintage Notes – The 2016 vintage continued a string of warmer than normal vintages starting back in 2013. The vintage started early and was warmer than normal until Mother Nature provided a reprieve from the heat. The Cabernet Sauvignon a Stone Tree broke bud early the second week of April, and the heat continued through May. The subsequent bloom was mid-May and a couple of weeks earlier than normal. June cooled down, and we welcomed cooler temperatures in July. Then, September and October provided perfect slow ripening weather. Block 24 Cabernet Sauvignon was harvested September 24th, and Block 17 Petit Verdot the following week on October 1st. The always sought after hang time led to refined, powerful wines with perfectly ripe, juicy fruits flavors with classic structure, natural acidity and saturated color leading to extraordinary quality.
